Tasty Thursday #3

I got this recipe from Flylady's website. I've made it a couple times and I really like it! Chip likes it, but CJ loves it, and Ruthi seems quite fond of it too. AND, it's easy!
TIP: I made a big batch of the seasoning mixture and keep it in a little baggie so each time I make it, I already have the seasoning mix. Saves a lot of time! (That tip was actually with the recipe, and it was a good one!)

Garlic Lime Chicken

3/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. cayenne pepper (optional)
1/8 tsp. paprika
1/2 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. thyme
1/4 tsp. dried parsley
6 boneless skinless chicken breasts
2 Tbsp. butter
1 Tbsp. olive oil
2 tsp. garlic powder
3 Tbsp. lime juice

In a small bowl, mix together all seasonings, except the last measurement of garlic powder and lime juice.

Sprinkle both sides of chicken breasts with seasoning. (If you like a mild flavor, sprinkle lightly, if you want a little more 'kick', sprinkle generously - I like it right in the middle - enough but not too much.)

Heat butter and oil in a large skillet over medium heat and saute chicken until golden brown, about six minutes on each side. Sprinkle with remaining garlic powder and lime juice and cook 5 minutes, stirring frequently to coat with the sauce. Serve. Yummy!
